While the coasts have had their fair share of these delectable treats for quite some time (Doughnut Shop in NYC and Randy's Donuts in LA) the trend is now moving inland. Chicagoans are soon to be the lucky recipients of Doughnut Vault, a new project from Gilt Bar owner Brendan Sodikoff. Needless to say, these aren't just any doughnuts, these are fresh, artisan creations made by self proclaimed "doughnut chef" Francois Gras.
While the official menu isn't out, we are already drooling from the shop's Tumbler. As for the hours, it seems like things might be a little spotty (but that's the whole fun of it right?). Time Out Chicago reports that the hours will be unconventional, with the shop closing once the goods are sold out and reopening once a new batch has been created (now that's a commitment to freshness). To keep customers in the know, the Vault will post a 20 minute pre-opening warning on Facebook and Twitter as a courtesy head's up. We have a feeling we will be seeing you in line.
