Oh. Em. Cheese.

When you think of Chihuahua cheese, chorizo, pickled jalapenos and bacon, what immediately comes to mind? Grilled cheese? We thought so…

The newest Lakeview spot (er, only Chicago spot) offering up a menu dedicated solely to the childhood delicacy that is grilled cheese has opened its doors on Belmont. Located next to Berlin (party time), Cheesie’s Pub & Grub is boasting grilled cheeses that your inner-10 year old could only dream about. We’re talking the Baked Potato (stuffed with french fries, bacon and chives, with a side of sour cream for dipping), the Jalapeno Popper (Cheddar Cheese, Cream Cheese, Fresh Jalapeno Slices, and Bacon on Texas Toast. Dip Sauce: Spicy Chipotle Mayo) and the Caprese (Mozzerella Cheese, Tomato, Extra Virgin Olive Oil, Cracked Black Pepper, Fresh Basil, on Garlic Sourdough. Dip Sauce: Creamy Pesto Mayo). And those are only a few. Check out the full list here. Warning: We’re in a food coma from just glancing at the menu.

Looking for a little something on the side? Cheese curds, fried pickles and homemade tomato soup. Need we say more? Okay, we will! Cheesie’s is open until 5 a.m. on Fridays and Saturdays, and rocks a bar menu of microbrews until 2 a.m.

Looks like your late night rendezvous just got a whole lot cheesier.
